can i create a special color by mixing some together?

Avoid having a layout with dark background and dark text,which is hardly readable. Better to choose among the samples having light background with dark colored text. For example, a white background with black text is the easiest to read. However, the colors provided is limited,and can i create a special color by mixing some together? Possible?
